ELUCIDATION OF CASSAVA LEAVES.
Cassava is a perpetual plant with perceivable, almost fan-shaped leaves resembling those of the related castor-oil plant but more deeply parted into more than five lobes. The fleshy roots are similar of dahlia tubers. Different varieties range from low herbs to branching shrubs and slender leaf-like trees.

Cassava is highly rich in Protein: 100 grams of cooked cassava leaves gives about 3.7 grams of protein which is greatly good for our health. And the leaves contain other kinds of proteins comparable to soybeans. It contains lysine, isoleucine, leucine, valine, and lots of arginine which are not common in green leafy plants. So it make it a great protein source.
The protein content of these leaves compare to sweet potato leaves and peanut leaves, up to 10 times more protein is found in cassava leaves than in the roots.
It contains high amount of carbohydrate: The carbohydrates content in cassava leaves is about the same as in snap beans and soy beans.
Cassava is also low in Calories which promotes healthy living:100 grams of cooked cassava leaves only contains about 37 calories, thus making it good for weight loss. And they also just about fat free.
Cassava leaves contain high amount of fiber: Cassava leaves contain a high amount of fiber that promotes the growth of probiotic bacteria which also boosts immune system. And fiber ease constipation. The fiber content in cassava leaves is wonderful.
It contains vitamins: Cassava leaves contain Vitamin C, that is great antioxidant to help prevent strokes, cancer, and cardiovascular disease. Also B Vitamins for good mood, vitality, and metabolism. Beta Carotene is also found in cassava leaves which helps to prevents and repair tissues and DNA damages. Potassium for water regulation and cardiovascular health, phosphorus and calcium for strong bones, iron and copper for anemia, zinc for a strong immune system, and magnesium and manganese for strong bones and enzyme production.
Cassava plants don’t seem to have many pests. So it thrives just about anywhere even in the poorest of soils. Just take a cutting of the stem of the plant, place it in the ground and it will root down and grow. For cassava roots to be large and full of nutrition it takes about 23-24 months but the leaves are just ready right away.
Cassava leaves should be cooked: Cassava leaves and roots contains hydrocyanic acid which serve as toxin to the body but when you cook it, the acid comes out of it into the water so make sure to pour away the water the leaves were boiled in. Cassava leaves must be cooked for at least 10 minutes. Don't forget to remove acid in cassava leaves.
